Farmers who grew dragon fruit should not complain that they did not get the price. If there is no price when the crop arrives, it can be powdered and stored. Indian Institute of Horticultural Research (IIHR) has developed a new technology for this.
There is a high demand for dragon fruit, which has the properties of keeping heart disease, cancer and other diseases under control and increasing immunity in the body. However, there is no good marketing system.
Thus, the farmers who grew the fruit were in trouble with losses due to lack of price. In order to avoid this and support farmers adopting large-scale farming, IIHR has developed a technology that facilitates the storage of dragon fruit in powder form, and farmers and entrepreneurs can obtain licenses for this technology. The Indian Institute of Horticultural Research (IIHR) at Hersghat has found a new method to produce dragon fruit powder.
Dragon Fruit Powder for Food:
Powder made from dragon fruit is used to impart a purplish pink color in ice cream, milk shakes, cakes and biscuits. However, the commercial value of the powders is quite high, with a spray-dried powder said to cost between Rs 4,000 and Rs 10,000. Dragon fruit powder reduces production cost by 50% and improves its nutritional quality. The powder is prepared using freeze-drying or spray-drying methods. % of maltodextrin which reduces the amount of fruit pulp in the powder. 20-40 percent is added. IIHR has developed technology to add only 4-8%. Otherwise tray drying techniques were used. As a result, the cost of production is significantly reduced. Establishing a center of excellence
Noticing the growing demand for dragon fruit, the Center has considered it a superfruit due to its high nutrient content. It also approved setting up of a Center of Fruit Excellence at IIHR Center at Hirehalli under the Mission for Integrated Development of Horticulture. To further enhance the market potential of the fruit, ICAR-IIHR has also started researching methods of preservation, processing and value addition of red lotus (dragon fruit).
